That is a Swiss Girolle. Specifically made for Tete de Moine.

Why do you ask?

The hardest part is finding the cheese. Not the Girolle.

This is true, I was trying to mark my territory in Dvae's D-90 but it din't go as planned, instead of getting a D-90 I ended up with wet shorts. :)
